Winter is a season of abundance. Sharing here our vegetarian 7-day meal plan that celebrates the winter vegetables! In my kitchen, farm-to-table takes on a whole new meaning as we pluck the freshest produce and cook together.
It’s December already! Udaipur has donned its winter colours. The mornings are late, the evenings early. Sweaters and scarves are out and jackets too have started peeping from their hangers.
Chai vendors along the streets have increased, filling the corners with hot chai aromas. Life’s pace has slowed to allow for warm blankets and a hot mug. My daily routine now includes filling up a thermos with ginger-lemon tea and sipping on it through the day (repeat when it’s over).
Soups and warm stews have just started coming into weekly meals. Soon we will transition to soups every day before dinner. The farm now bursts with winter colours – rows of greens (spinach, fenugreek, mustard, amaranthus), crimson beets, purple eggplants, red tomatoes, and orange pumpkins.

Sarah enjoys her time plucking fresh vegetables, dusting them off and eating right away.
It stimulates all the senses, deepens our innate connection with Earth, and builds core life skills of patience, respect, gratitude, and reverence.
7-day meal plan – vegetarian and vegan friendly
If you have a choice, always choose local and seasonal. It is fresh, it is nutritious, it is wholesome. I am sharing here a 7-day meal plan that celebrates the produce growing in Udaipur this season. Do adapt it to produce available in your city.

The meal plan is a suggestion and can act as a guide. I have used a mix of grains throughout the week – millets like ragi, bajra, and jowar along with wheat for rotis and pancakes; vermicelli, couscous and brown and white rice for rice dishes.
Keep an assortment of homemade chutneys – coconut chutney, tomato chutney, and guava chutney to serve on the side.
