7 delicious and easy Mango recipes to make at home! The best thing about peak summer season is the bounty of fruits it brings — especially Mangoes (both raw and ripe). Some recipes are with the sour raw green mango and some with sweet ripe mangoes.
A few days ago, I was sharing with a few friends — “No heat, No Mangoes”! It was a reflection on how the things that bring us discomfort are often the source of joy as well! Just like summers and mangoes 🙂
In India there are many varieties of Mangoes – Kesar, hafus, langda, dussehri, badaam, totapuri and more. I don’t even know what the corresponding English names are for the different mango varieties. And in true Indian style, we have as many opinions as to which mango variety is the best variety! 🙂
Even the recipes vary from breakfast to main to dessert! Despite all the recipes, the most common way of eating a mango in my home, is to slice it in half, scoop out the flesh, and enjoy! Or if are feeling a bit fancy, we will add it to a fruit bowl 🙂
Next come in the various dishes – a mango lassi or smoothie in breakfast or pieces of mango in our oatmeal; Indian raw mango rice for lunch; aam paana or a mango and lime cooler in the evening to beat the summer heat; and some mango soufflé for dessert!
Easy Mango recipes
While most recipes listed here are vegan or vegetarian, just one recipe of mango soufflé uses egg whites. I definitely need to try a vegan version of it.
MANGO LASSI
This is an easy & quick recipe for vegan Mango lassi made with coconut yogurt alternative. Lassi is a traditional Indian yogurt drink. But I don’t think anyone in the world is a stranger to the delicious Mango Lassi! A tall glass of chilled Mango lassi can make all the summer blues go away.
CHIA SEEDS AND MANGO PUDDING
This mango and chia seeds pudding is like a tropical paradise! Healthy, delicious, made with just 4 ingredients, and in less than 10 mins, it can be served as breakfast, or snack, or a dessert! You choose.
MANGO AND LIME COOLER
Served over ice, this mango and lime cooler is a great drink to beat the summer heat. I often make it at the beginning of mango season when the mangoes are not so sweet but as tempting as ever. A little pepper adds a nice kick to this cooling drink!
