These Cucumber Rolls are a simple yet incredibly refreshing snack that’s perfect for picnics, potlucks, or a light lunch. The thinly sliced cucumbers are layered with a creamy mint-yogurt dip and colorful bell pepper strips, then rolled tightly for a delightful bite-sized treat.
We recently made these Cucumber Rolls during our Farm-to-Table picnic and they were an instant hit with everyone. They’re light, refreshing, and packed with flavour. Plus, they’re a great way to showcase the beauty and freshness of farm-grown cucumbers.
So, gather your ingredients, head to your garden (or your local farmer’s market), and whip up a batch of these delicious “pick me ups”. Enjoy!
Cucumber rolls with Mint Yogurt Dip
Ingredients (1cup = 240ml; 1tbsp = 15ml; 1tsp = 5ml)
- 10 cucumbers
- 1 yellow bell pepper
- 1 red bell pepper
- 1 green bell pepper
- ½ cup yogurt
- ¼ cup fresh mint leaves
- Salt to taste
- Ground black pepper to taste
- Chaat Masala to taste
Instructions
For the Dip
- Finely chop 8-10 fresh mint leaves. (Keep remaining for garnish)
- In a bowl, mix yogurt, mint, salt, pepper, and chaat masala.
Making the rolls
- Using a vegetable peeler, make thin slices of cucumber, length-wise. (You will need to keep the first and last aside)
- Cut the bell peppers into thin strips of about 1.5″ long.
- Take an empty plate, and place one cucumber. Place another on top, with most of it overlapping but not all. Place one more in the same way.
- Lightly spread the yogurt-mint dip.
- Add 1-2 each of red, yellow and green bell peppers to one side of the cucumber strips.
- Holding the peppers, roll the cucumber strips tightly.
- It will stand, held. Add a fresh mint leaf on top.
- Repeat for all. Serve on a platter with leftover dip on the side (though it is not usually needed).

It was a fun monsoon evening where strangers met over fresh farm food and shared an interest in nature exploration.
It feels like ages since I last shared a recipe on the blog! September was a whirlwind of activity here on the farm, as we focused on preparing the fields for our winter crop sowing. We’ve planted fenugreek, peas, beetroots, and garlic and eagerly anticipate the harvest.
