Good morning from Udaipur! Today, I’m sharing a kitchen discovery that’s been a game-changer in our household – Creamy Cauliflower Pasta Sauce! As a parent, I’m always on the lookout for ways to sneak in healthy vegetables, especially for my pasta-loving daughter, Sarah. And this sauce? It’s pure magic.

We all know white pasta isn’t the most nutritious meal, but this creamy, dreamy sauce transforms it into a veggie-packed delight. The best part? One serving of pasta with this sauce means Sarah’s happily devouring almost a whole head of cauliflower without even realizing it! It’s creamy, it’s delicious, and it’s a win-win for everyone.
But this sauce isn’t just for pasta! It doubles as a fantastic dip. I recently took it to a potluck during a match day, and no one could guess its secret ingredient. Everyone raved about its creamy texture and rich flavor. It’s a true chameleon in the kitchen!
And the best part? It’s incredibly easy and quick to make. I also cooked it as part of a farm-to-table series we are doing on the farm where, from harvesting a fresh cauliflower to having the sauce ready, all it took was about 20 minutes! See me in action here.
Here’s how to whip it up in no time!
Vegan Cauliflower Pasta Sauce
Ingredients (1cup = 240ml; 1tbsp = 15ml; 1tsp = 5ml)
- 1 cauliflower head ~400g
- 5-6 garlic cloves
- 2 tbsp Olive oil
- 4-5 fresh basil leaves
- Salt to taste
- Black pepper to taste
- 1 tsp mixed Italian seasoning
- Water for boiling
Instructions
- Prepare pasta according to packet instructions and keep aside.
- Wash and cut the cauliflower into florets.
- Boil the florets in salted water until fork-tender. (Remove a floret onto a cutting board, test with a fork, if it breaks, it’s ready)
- Drain and set aside. Reserve the cooking water as well.
- Sauté minced garlic in olive oil with some fresh basil.
- Transfer the cooked cauliflower to a blender.
- Add 1 cup of the cooking liquid, the sautéed garlic, salt, and pepper.
- Blend until smooth and creamy. Add more water if required. If you are not vegan, you can also add ½ cup milk.
- Mix the sauce with your cooked pasta. Or transfer to a bowl to serve as dipping sauce.
- Top with fresh basil and/or Italian seasoning.
- Serve immediately and enjoy!

Did you know even vegetables get sunburnt?

In the video, you would see that the freshly harvested cauliflower is slightly purple- perfectly normal. Under open-field cultivation, cauliflower gets sunburnt and turns pink/ purple. But on cooking, it turns back white. This year, we had an early onset of summer and high heat, so much of our cauliflower got a slightly pink/purple hue. We had some trouble convincing our customers that it’s healthy and perfectly safe to eat but sadly a lot of us still buy vegetables by their looks and not pay much attention to how it’s grown. Hoping to change it by sharing more.
