If I had a song for blueberries, I will be singing it all day long. 🙂 But well I do the second best, I feast on them as often as I can. In season, there is nothing better than snacking on a handful of fresh blueberries. But even when not in season, frozen blueberries are always out there for that delicious little snack.
Blueberries are the easiest of all berries to freeze. While I like to wash, dry, and then freeze my berries so that they are ready to go into any dish straight out of the freezer; if there is no time, you can even just simply put a shop-bought blueberry box right into the freezer!
Have you ever chewed on a frozen blueberry? It tastes like this mini-mini sorbet of frozen deliciousness. I love sprinkling frozen berries on my overnight oats cup and chew on them in every other bite :-). And they are the best when you bake them in a muffin, or simply whizz them with some fruits to make a smoothie.
Last season I froze almost 2 kilos of blueberries and I feel so delighted to bring you these 4 delicious frozen blueberry recipes. They are very simple and also perfect for a make-ahead breakfast meal prep. Mornings are usually tough and if you can have the prep for breakfast ready the night before, it makes it pretty easy to be healthy 🙂

1. Healthy wholewheat Blueberry Pancakes
These delicious blueberry pancakes are a family favourite and with frozen berries in the freezer and homemade instant pancake mix in the pantry, they are hassle free and perfect for lazy weekend brunches.
2. Blueberry and Banana Smoothie
You can easily make frozen fruit packs of single serving of this smoothie and in the morning just pop the frozen fruits into the blender with some vegan milk and maple syrup.
3. Blueberry and oats porridge
If you have some time to cook in the morning, a bowl of porridge is a great way to start your day. I love the cooking process of it as well, it is almost meditation to keep stirring the oats until they turn into this beautiful, perfectly non-lumpy porridge. It is no surprise that I learnt this recipe recently during a Vipassana retreat. We had this beautiful oats porridge for breakfast everyday and since I cannot take regular milk, and there wasn’t any non-dairy milk there, it was a bowl of porridge for me everyday. It warmed me, soothed me and prepared me well for the 10 hours of meditation that followed :-).
4. Vegan Blueberry Banana Bread
This is a great make ahead breakfast bread. I love to pack a few slices into my lunch box as a little treat in the middle of the day. The bread keeps well in the refrigerator for upto a week. Pair with a scoop of vanilla ice-cream and some honey for a delicious dessert!
