Past two weekends have been very busy, with mummy-papa shifting to Delhi and with World cup final and the following euphoria and celebrations! One of these days when we didn’t want to order/ eat-out, I tried this recipe of quick pasta that I had read in a Good Housekeeping issue sometime back. It’s fairly quick with minimal ingredients and makes for a nice and warm dinner. You can use any kind of pasta you prefer. I always pick up the tri-colour whole-wheat pasta (usually farfalle/fusilli). I don’t know if it’s any healthier than the usual off-white pasta but I just like colours in my food! And I strongly believe that more the colours in your food, the healthier it is! So next time you are in a rush and still want a home cooked meal, try this one out.
Keep it Short and Simple Pasta
Preparation Time: 5 mins | Cooking Time: 15 minutes | Serves 3-4
Ingredients
Pasta 2 cups
Tomato, medium size, pureed 4
Onion, thinly sliced 2
Garlic, chopped/grated 6 cloves
All purpose flour/ Maida 2 tbsp
Salt to taste
Red chilli flakes 2 tsp
Mixed dried herbs 3 tsp
Black pepper 1 tsp
Sugar a pinch
Grated cheese (optional) 2 tbsp
Olive Oil 3 tbsp
Method
- Boil 8 cups of water
- Add pasta, slat and 1 tbsp olive oil and cook until al dente
- Heat olive oil in a flat bottom non-stick pan
- Saute onions until soft
- Add garlic and sauté for another 5 minutes
- Add all-purpose flour, stir
- Add pureed tomatoes and stir to ensure there are no lumps
- Bring to a boil
- Season with salt, pepper, sugar, chilli and dried herbs
- Drain the pasta and add to the pan
- Mix well and cook for another 2 minutes and remove from heat
- Top with grated cheese and serve with warm bread (optional)
Note: You can also add cooked veggies and meats of your choice
If you don’t have dried herbs, only oregano would also do. (I often use the packets that come with Dominoes delivery)
