There is no such official dish as Madhuban Pasta :). My husband gave this name when I conjured up this delicious pasta in under 15 minutes. Last Saturday we went to a nearby resort called Madhuban Resort and Spa for a “detox” weekend. Madhuban is very scenic with lush green gardens, large variety of fruit trees and meandering pool, which gives a tropical feel. We got back on Sunday afternoon at around 2pm, very hungry but didn’t want to go for a dominoes or a McDonald.
So I went into my kitchen thinking quick, low-fat and healthy. This is what I came out with after 15 minutes! Enjoy
The Quick Fix Pasta
Preparation Time: 5 mins | Cooking Time: 15 minutes | Serves 2
Ingredients
200 gms Pasta
1 Tomato, small size, chopped
2 Onion, thinly sliced
2 Bell Pepper/ Capsicum, thinly sliced
4 cloves of Garlic, chopped
2 tsp Red chilli flakes
4 tsp Mixed dried herbs
1 tsp Black pepper
3 tbsp Olive Oil
1 tbsp Fresh mint leaves, chopped
Salt to taste
Bread
Method
- Boil 8 cups of water
- Add pasta, salt and 1 tbsp olive oil and cook until al dente
- Heat olive oil in a flat bottom non-stick pan
- Saute onions, bell peppers and garlic for 5 minutes or until soft
- Add chopped tomatoes and cook for another minute
- Season with salt, pepper, chilli flakes and dried herbs (I used 5 sachets of oregano which comes with Dominoes pizza)
- Drain the pasta and add to the pan
- Mix well and remove from heat
- Sprinkle fresh mint leaves
- You can heat the bread in the same pan used for pasta, the bread will get the remaining flavour.
- Serve with warm bread
Note: Pasta should always be had fresh so don’t cook and keep the pasta for long. You can keep the veggies ready but boil the pasta only before eating.
