Friday night was pasta and scrabble night. I wanted to do something simple and quick so I went to the grocery shop to buy bell peppers and spring onion when I saw these mushroom packets there and bought a couple on impulse. It’s amazing how a lot of my dinner table items get decided by what’s new in his shop :).
I remember eating a mushroom and garlic salad in one of the restaurants and I just kind of converted that into a pasta recipe and that’s why I even call it spaghetti with mushroom salad! The only thing which takes time in this recipe is cooking the pasta, rest it mainly is chopping and mixing!
Spaghetti with mushroom salad
200 gms spaghetti
250gms button mushrooms
3 stalks of fresh garlic or use 4-5 garlic cloves
3 stalks of spring onion
2 tsp dried thyme leaves
½ tsp ground black pepper
Zest and juice of 1 lime
Salt to taste
2 tbsp grated cheese
2 tbsp Olive oil
- Veggie preparation: Slice the mushrooms and finely chop the garlic and spring onions. I use fresh garlic because they are in season and even their stalks have a lot of flavour; but regular garlic cloves will be just as fine.
- Heat oil in a non-stick pan; add chopped onions and garlic. Sauté for a minute. Add mushrooms, salt, thyme and pepper. Mix everything together and sauté for just a couple of minutes. Add the lemon zest and juice. Mix well. The mushroom salad is ready!
- Cook the pasta according to packet instructions. Drain and add the drained pasta to the mushroom salad. Also add in 2 tbsp of water in which the pasta was cooked. Mix everything together. Cook them together for a minute and then remove from heat.
- Sprinkle grated cheese, give it another toss and enjoy!
