On the last night of our week long beach vacation at wildwood crest, NJ; the men decided to take over the kitchen. Massu was the chef; Rashed the sous chef (with Gazala pitching in to cover his duties!) and Sikander the bartender (cleverly staying away from the kitchen work). I had fajitas for the first time at Chili’s and I was wondering why do I have to pay him when I’m doing so much of the work! 🙂 So actually fajita’s are also sort of do-it-yourself meals.
I don’t have a set recipe for this one. When you are cooking for 14 people, you stop measuring and just go by estimates. So without even attempting to guess the measures I’ll simply jot down the ingredients and the steps they took without worrying about measures and timings :).
D-I-Y meal: Chicken and Beef Fajitas
Red, green, yellow bell peppers, julienned
Onions, julienned
Old El Paso Fajita Seasoning (the hero and the key ingredient!)
Boneless chicken and beef, cut into strips
Tortillas
Avocado
Tomato
Lime juice
Salt
Pepper
Sour cream
- Guacamole: Cut the Avacado in two and scoop out the pulp in a bowl. Mash with a fork. Add chopped tomatoes, lime juice, salt and pepper to taste. Adjust seasoning if required.
- Sauté chicken and half of bell peppers and onions in one pan. Add fajita seasoning. Keep aside
- Sauté beef and the remaining bell peppers and onions in another pan. Add fajita seasoning. Keep aside
- Heat tortillas in microwave
- Open the can of sour cream
- Serve it all together and let people make their own combinations! 🙂

Wow – this sounds like the way we’ve made them too (except I don’t remember what fajita seasoning we used, probably one we mixed together from whatever we had on hand), and they seemed to have been liked – at least they were all eaten! Your version sounds good, and now I’ll have to try that Old El Paso seasoning. (BTW…found your site through The Blazing Trail’s link to you)

Old El Paso makes the work even more simpler specially if you don’t want to run around kitchen handing the men all the spices they ask for :D! Try it 🙂
