This month’s weekly meal plan has all vegan and gluten-free dishes. If you are trying to incorporate some vegan, gluten-free meals in your week, this is a great resource, complete with recipes and time-saving grocery list (+meal prep notes!).
I’ve also included prep notes as some dishes, like the baked oatmeal, can be prepared over the weekend and will stay good for the whole week (and beyond) in freezer. A wise chef once told me that
“a few hours spent cooking on a quiet Sunday will allow you to load your fridge and cupboard with components that will make it easy to create amazing midweek meals.”
I can’t tell you how true that is! The best way to share, I felt, was by including “Weekend Meal Prep Notes” along with the Weekly Meal Plans from this month.

WEEKEND COOKING & MEAL PREP:
- Baked Oatmeal
- Granola
- Almond Milk
- Cookies/Date bars/brownies (baked goods for snacking)
- Chop Red Cabbage and the vegetables for Monday lunch Salad
- Grate cauliflower
WEEKDAY PREP NOTES:
- Tuesday: Make extra roasted chickpeas and quinoa for next day meals
- Thursday: Roast extra vegetables for Friday lunch Salad
- Manage Leftovers: Cook double quantities on days where next day’s lunch is a leftover from dinner.

February Updates
In terms of updates on activities for this month, it’s been a pretty low couple of weeks. Since I came back from India and since all the family left, it was already middle of Feb and then I remember switching on my laptop and staring at the screen. It takes me a while to come back to a self-directed flow. Before I left, I had finished the SEL project in the school I was volunteering. Currently I’m trying to get focussed on three things:
- Get more regular with writing and sharing blog posts here. I took a break from food blogging when I was traveling and now it is time to get back to sharing more vegan inspiration!
- Weekly Awakin Circles: My husband and I host weekly community meditation circle at our home. The evening involves one hour of sitting in silence, a circle of reflection, and then a vegan meal in silence. The circles are offered as gift in the spirit of service and they have been life changing for us in ways we can’t even put in words. But since we were traveling, the circles were also on a hold for almost 2 months.
- Learning a new art! This is the most exciting part 🙂 I’m learning how to crochet and I can’ believe that I made all these little things! I’m just beginning, let’s see where it goes but I find crochet very relaxing and very meditate. My sister asked me to make coasters for her so those are what I am starting with now. See the ones in the pic that I’m making for her…what do you think?
