Mediterranean Parsley Salad
Simple and flavourful Mediterranean Parsley Salad - full of fresh flavours, it makes for a great salad lunch as well as a side.

curly parsley leaves
stems removed

tomato

green onion

Dressing

olive oil

lemon
juiced

lemon zest

mustard sauce
Salt
to taste
Black pepper
to taste

Instructions
Wash and cut all salad ingredients, then transfer to a large mixing bowl.
Whisk together all dressing ingredients in a small jar.
Drizzle the salad dressings all over the salad then gently toss together and it’s ready to serve.
Notes
To make ahead, keep the chopped vegetables and the dressing separate. Combine 30 mins before serving.
