4cupswatermelondeseeded and chopped
½cupfresh mint
½lime(juice of)
1pinchblack salt*
Instructions
Blend the watermelon and mint to a puree in a blender or using a hand blender. Keep a few watermelon cubes and mint leaves aside for serving.
Add lime juice and a pinch of black salt. Blend just once more.
Empty into 2 tall serving glasses. Add a few watermelon cubes into each glass and garnish with mint leaves. Serve immediately.
Notes
If you wish to add ice, you can either crush it and juice it with the watermelon or simple add the cubes to the serving glass and then pour over the watermelon juice.
I like the fibrous texture of watermelon juice so I don’t strain it.
